This dairy & gluten free, protein packed soup is a great meal to eat at home or take on the go in a thermos.

Ingredients:

  • 12 Shrimp (U14-16) deveined, tail off
  • 2 Cans organic unsweetened light coconut milk
  • 2 tbsp tomato paste
  • 1/2 cup chopped cilantro
  • 20g collagen protein
  • 6oz peeled baking potato
  • 1 tsp crushed red pepper (can use less or more to your liking)
  • salt & pepper to taste

Directions:

1. Cook shrimp in pan

2. Cook potato in microwave about 8mins

In blender add:

2 Cans organic unsweetened light coconut milk

2 tbsp tomato paste

1/2 cup chopped cilantro

20g collagen protein

1 tsp crushed red pepper (can use less or more to your liking)

salt & pepper to taste

add cooked shrimp & sliced cooked potato

Blend until all ingredients are smooth and serve
