Pancakes have always been my strong point. This simple no fail recipe will create perfect pancakes every time. l’ll start with the basic recipe first and a few variation below.

If you are paleo or grain free use Birch Blenders Paleo Mix rather than Kodiak Cake mix!

Kodiak make high protein, whole grain mixes.

You can also use any basic pancake mix that says “add water”

Makes about 4 Pancakes (alter ingredients for more pancakes)


1/2 cup Kodiak Cake mix  1/4 Cup Egg Whites* or

1/2 scoop Dymatize Iso 100 Whey Protein ( I love Birthday Cake or Orange Creamsicle)  8g Collagen  (optional)


  1. Combine Kodiak Cake mix, Egg Whites & collagen in a blender or hand beat together until mixed smooth 2. Using a non stick pan over medium heat pour the mixture into the pan making 4″ pancakes 3. Cook over medium heat until bubbles form and then flip the pancake

I use Walden Farms Syrup or Fat Free Whipped cream but you can add any type of syrup on top.  *using eggs or egg whites instead of water makes the pancakes fluffier

  • Pancake mix with 1/2 banana, protein powder and chocolate chips then follow steps 1-3
  • Pancake mix with bacon, chocolate chips & Dymatize Chocolate Peanut butter protein then follow steps 1-3
  • If you want to avoid all starches you can mash up a banana with egg whites,  I would put it in a blender, then cook them as pancakes.
